Wednesday Breakfast Club Week 6

As we are starting to get into the really colder weather I was trying to think of something that you could  eat warm or cold. While the temperature in the south island are still struggling to get past a high of 5 degrees in the north island it was 18 degrees yesterday in Hawkes Bay so quite a difference there. This is a recipe from Libby Weavers book The Real Food Chef and has all of the goodness that berries and  quinoa offer and  also with the sweetness of dates. The almonds add protein for satiety and healthy fats. Enjoy.


For the berry almond mixture                                                                           

  • 2 fresh dates
  • 1 C raw almonds soaked overnight
  • 3 C water
  • 1C frozen blueberries


For the Quinoa

  • 1C tri coloured quinoa
  • 2C water
  • pinch of cinnamon

Combine the dates and almonds in a food processor unit the nuts re well ground. Add the frozen blueberries until well incorporated and then add the water  and process until it is smooth and creamy.

For the quinoa bring the water to a boil and add the quinoa and cinnamon. Cover and cook until the water has absorbed.

Pour the berry mixture over the hot or cold quinoa.
